- 1 cup apple cider
- 2 cups all-purpose flour
- 1.5 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups powdered sugar (for frosting)
- 1/4 cup spiced apple cider (for frosting)
- 1/2 teaspoon ground cinnamon (for frosting)
- 1/4 teaspoon ground nutmeg (for frosting)
- Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a saucepan, reduce apple cider over medium heat until about 1/2 cup remains. Let cool.
- In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, cream butter and sugar until fluffy. Add eggs and vanilla, mixing in cooled apple cider.
- Gradually add dry ingredients into the wet, mixing until just combined.
- Fill liners 2/3 full and bake for 18-20 minutes or until a toothpick comes out clean. Cool completely.
- For frosting, beat powdered sugar with spiced apple cider, cinnamon, and nutmeg until smooth. Frost cooled cupcakes.
