  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar (for frosting)
  • 1/4 cup spiced apple cider (for frosting)
  • 1/2 teaspoon ground cinnamon (for frosting)
  • 1/4 teaspoon ground nutmeg (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a saucepan, reduce apple cider over medium heat until about 1/2 cup remains. Let cool.
  3. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In another bowl, cream butter and sugar until fluffy. Add eggs and vanilla, mixing in cooled apple cider.
  5. Gradually add dry ingredients into the wet, mixing until just combined.
  6. Fill liners 2/3 full and bake for 18-20 minutes or until a toothpick comes out clean. Cool completely.
  7. For frosting, beat powdered sugar with spiced apple cider, cinnamon, and nutmeg until smooth. Frost cooled cupcakes.
