Apple Cider Donut Muffins – Easy Cinnamon Sugar Treat

A deliciously easy recipe for Apple Cider Donut Muffins coated in cinnamon sugar.

  • 1 cup apple cider
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a saucepan, simmer apple cider over medium heat until reduced to 1/2 cup. Let it cool.
  3. In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
  4. In another bowl, combine melted butter, eggs, vanilla, and the cooled apple cider.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Fill the prepared muffin tin about 2/3 full and bake for 18-20 minutes until a toothpick comes out clean.
  7. Let muffins cool slightly before coating with cinnamon sugar.

Notes

  • For a richer flavor, add a pinch of nutmeg to the dry ingredients.
  • These muffins are best enjoyed fresh but can be stored for a few days.
