Apple Crisp Cheesecake Bars

Deliciously creamy cheesecake meets a crunchy apple crisp topping in these indulgent fall dessert bars.

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 4 cups diced apples
  • 1/2 teaspoon cinnamon
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter.
  3. Press the mixture into the bottom of the prepared baking dish and bake for 10 minutes.
  4. In a large mixing bowl, beat cream cheese and granulated sugar until smooth, then add eggs and vanilla extract.
  5. Spread the cheesecake mixture over the baked crust.
  6. In another bowl, toss the diced apples with cinnamon and layer over the cheesecake.
  7. In another bowl, combine oats, brown sugar, and salt, then sprinkle over the apples.
  8. Bake for an additional 30-35 minutes or until the top is golden brown.
  9. Allow to cool before cutting into bars.
