- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup apricot preserves
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 cup chopped nuts (optional)
- Preheat the oven to 350°F (175°C).
- In a bowl, cream together the butter and sugar until light and fluffy.
- Add in the flour and salt, mixing until well combined.
- Press half of the dough into the bottom of a greased baking pan.
- Spread the apricot preserves evenly over the dough.
- Drop spoonfuls of the remaining dough over the preserves.
- Bake for 30-35 minutes or until lightly golden.
- Cool before cutting into bars.
