Baked Chickpea and Rice Balls

Baked Chickpea and Rice Balls are delicious, healthy bites packed with flavor, perfect as a snack or party appetizer.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 cup cooked rice
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mash the chickpeas with a fork or potato masher.
  3. Add the cooked rice, breadcrumbs, Parmesan cheese, egg, olive oil, garlic powder, onion powder, paprika, salt, and black pepper. Mix until well combined.
  4. Form the mixture into small balls and place them on a baking sheet lined with parchment paper.
  5. Bake for 25-30 minutes or until golden brown, flipping halfway through.
  6. Serve warm with your favorite dipping sauce.
