- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 3 ripe bananas, sliced
- 1/2 cup brown sugar
- 1/4 cup dark rum
- 1 tablespoon lemon juice
- 1 cup heavy whipping cream
- Preheat oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
- In a large mixing bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
- Pour the cream cheese mixture over the crust.
- Bake for 45 minutes, then let it cool.
- In a skillet, combine sliced bananas, brown sugar, rum, and lemon juice over medium heat until caramelized.
- Pour the banana mixture over the cooled cheesecake.
- In another bowl, whip heavy cream until stiff peaks form, then spread over the bananas.
- Chill the cheesecake for at least 4 hours before serving.
Notes
- For extra flavor, add a sprinkle of cinnamon to the banana mixture.
- Serve with whipped cream and caramel sauce.
