  • 1 cup brown rice
  • 2 cups broccoli florets
  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon honey
  • 2 teaspoons lime juice
  • 1 tablespoon soy sauce

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cook the brown rice according to package instructions.
  3. In a small bowl, mix together the mayonnaise, sriracha, honey, lime juice, and soy sauce to make the Bang Bang sauce.
  4. Cut the salmon fillet into bite-sized pieces and toss with a little oil and seasoning.
  5. Spread the salmon pieces on a baking sheet lined with parchment paper and bake for 12-15 minutes.
  6. Steam or sauté the broccoli florets until tender.
  7. Assemble the bowls by adding brown rice, broccoli, and baked salmon. Drizzle with Bang Bang sauce.
