  • 2 pounds beef chuck, cut into chunks
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup onions, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Brown the beef chunks on all sides.
  2. Add the chopped onions and garlic, sautéing until the onions are translucent.
  3. Stir in the tomato paste, then pour in the beef broth.
  4. Bring to a boil, then reduce heat and add the carrots, potatoes, thyme, salt, and pepper.
  5. Cover and simmer for about 1.5 to 2 hours until the beef is tender.
  6. Stir in the frozen peas during the last 10 minutes of cooking.

Notes

  • For added flavor, let the stew sit for a few hours or overnight before serving.
  • Serve with crusty bread for a complete meal.
