  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 cup onions, chopped
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 2 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 8 corn tortillas
  • 1 cup cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add onions and garlic, sauté until translucent.
  2. Brown the beef chuck roast on all sides.
  3. Add bay leaves, beef broth, chili powder, cumin, and oregano. Bring to a boil, then reduce heat and simmer for about 3 hours.
  4. Remove the beef, shred it, and return to the pot.
  5. Heat the corn tortillas in a skillet until warm.
  6. Fill each tortilla with the beef and top with cilantro and a squeeze of lime.
