- 2 pounds beef chuck roast
- 1 tablespoon olive oil
- 1 cup onions, chopped
- 4 cloves garlic, minced
- 2 bay leaves
- 2 cups beef broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon oregano
- 8 corn tortillas
- 1 cup cilantro, chopped
- 1 lime, cut into wedges
- In a large pot, heat the olive oil over medium heat. Add onions and garlic, sauté until translucent.
- Brown the beef chuck roast on all sides.
- Add bay leaves, beef broth, chili powder, cumin, and oregano. Bring to a boil, then reduce heat and simmer for about 3 hours.
- Remove the beef, shred it, and return to the pot.
- Heat the corn tortillas in a skillet until warm.
- Fill each tortilla with the beef and top with cilantro and a squeeze of lime.
