1 cup Biscoff cookies, crushed
4 oz cream cheese, softened
1 cup pumpkin puree
1/2 cup Greek yogurt
1/2 cup protein powder
1/4 cup maple syrup
1 tsp vanilla extract
1 tsp pumpkin spice
1/2 tsp salt
Instructions
Preheat the oven to 350°F (175°C).
In a bowl, mix crushed Biscoff cookies with melted butter.
Press the mixture into the bottom of a springform pan.
In another bowl, combine cream cheese, pumpkin puree, Greek yogurt, protein powder, maple syrup, vanilla extract, pumpkin spice, and salt. Mix until smooth.
Pour the cheesecake mixture over the crust.
Bake for 25-30 minutes, or until set.
Let it cool and refrigerate for at least 2 hours before serving.
