Butternut Squash Pasta Sauce

A creamy butternut squash pasta sauce that brings warmth and comfort to your dinner table.

Ingredients

  • 2 cups butternut squash, roasted
  • 1 cup heavy cream
  • 1 garlic clove, minced
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the butternut squash, then roast for 25-30 minutes until tender.
  3. In a blender, combine the roasted butternut squash, heavy cream, garlic, nutmeg, salt, and pepper. Blend until smooth.
  4. In a pan, heat olive oil over medium heat and add the blended sauce.
  5. Stir in Parmesan cheese, and simmer for 5 minutes.
  6. Serve over your favorite pasta.

Notes

  • This sauce can be made ahead of time and refrigerated for up to 3 days.
  • For a vegan option, substitute heavy cream with coconut milk and omit the cheese.
