Caramelized Leek and Mushroom Gruyere Pasta

  • 2 leeks, sliced
  • 8 ounces mushrooms, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup Gruyere cheese, grated
  • 1/4 cup heavy cream
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Cook the pasta according to the package instructions.
  2. In a skillet, heat olive oil over medium heat.
  3. Add leeks and cook until caramelized, about 10 minutes.
  4. Add mushrooms, salt, and pepper, and cook for another 5 minutes.
