Caramelized Onions, Roasted Eggplant, and Tomato Penne Pasta (vegan, gluten-free)

A delicious vegan and gluten-free pasta dish featuring caramelized onions, roasted eggplant, and fresh tomatoes.

Ingredients

  • 8 ounces penne pasta
  • 2 tablespoons olive oil
  • 1 large eggplant, diced
  • 2 large onions, sliced
  • 3 garlic cloves, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons balsamic vinegar

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the diced eggplant and sauté until tender.
  3. Add the sliced onions and cook until caramelized, about 10-15 minutes.
  4. Stir in the minced garlic and cook for 1 more minute.
  5. Add the diced tomatoes, basil, salt, pepper, and balsamic vinegar. Simmer for 5 minutes.
  6. Toss the cooked penne pasta with the vegetable mixture.
  7. Serve warm and enjoy!

Notes

  • For a spicier version, add red pepper flakes.
  • Feel free to substitute other vegetables based on your preference.
