  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, combine grated carrots, flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk together sugars, vegetable oil, eggs, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in walnuts if using.
  5. Pour the batter into the prepared baking dish and spread it evenly.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool before cutting into bars and serving.

Notes

  • For extra flavor, consider adding raisins or coconut to the batter.
  • Dust with powdered sugar before serving for a nice presentation.
