- 2 cups granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 4 large eggs
- 1 cup vegetable oil
- 2 cups grated carrots
- 1 teaspoon vanilla extract
- Preheat the oven to 350°F (175°C) and grease a 15×10 inch jelly roll pan.
- In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, beat eggs and then add oil, grated carrots, and vanilla extract.

- Bake for 15-20 minutes until a toothpick comes out clean.
- Immediately roll the cake in a clean kitchen towel and let it cool completely.
- Once cooled, unroll the cake and spread cream cheese frosting before rolling it back up.
- Chill in the refrigerator for at least an hour before slicing and serving.
