  • 4 large eggs
  • 1 cup vegetable oil
  • 2 cups grated carrots
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 15×10 inch jelly roll pan.
  2. In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat eggs and then add oil, grated carrots, and vanilla extract.
  4. Mix the wet ingredients into the dry ingredients until just combined.
  5. Pour the batter into the prepared pan and spread evenly.
  6. Bake for 15-20 minutes until a toothpick comes out clean.
  7. Immediately roll the cake in a clean kitchen towel and let it cool completely.
  8. Once cooled, unroll the cake and spread cream cheese frosting before rolling it back up.
  9. Chill in the refrigerator for at least an hour before slicing and serving.

  • Make sure to let the cake cool completely before applying frosting.
