Carrot Cake Sourdough Bread

A unique blend of carrot cake and sourdough for a delightful bread experience.

  • 2 cups all-purpose flour
  • 1 cup shredded carrots
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup sourdough starter
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk together the sugars, oil, eggs, vanilla extract, and sourdough starter.
  4. Combine the wet ingredients with the dry ingredients and fold in the shredded carrots and walnuts.
  5. Pour the mixture into a greased loaf pan.
  6. Bake for 50-60 minutes or until a toothpick comes out clean.
  7. Let cool before slicing and serving.

Notes

  • For a sweeter bread, add more sugar to taste.
  • Store leftovers in an airtight container.
