Ultimate Cheesy Ground Beef Enchiladas with Rich Sauce and Melted Cheese

  • 1 pound ground beef
  • 1 can enchilada sauce
  • 2 cups shredded cheese
  • 10 corn tortillas
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, brown the ground beef over medium heat. Drain excess fat.
  3. Add garlic powder, onion powder, cumin, salt, and pepper to the beef. Stir to combine.
  4. Coat the bottom of a baking dish with some enchilada sauce.
  5. Soften tortillas in a microwave for 30 seconds.
  6. Fill each tortilla with beef and sprinkle with cheese, then roll and place in the baking dish seam side down.
  7. Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.
  8. Bake in the oven for 20-25 minutes until cheese is melted and bubbly.
  9. Garnish with chopped cilantro before serving.

Notes

  • For a spicier version, add chopped jalapeños to the filling.
  • Serve with sour cream and avocado on the side.
