  • 2 large eggs
  • 2 teaspoons almond extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup cherry preserves
  • 1/2 cup sliced almonds
  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the almond extract.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them a few inches apart.
  6. Make a small indentation in each cookie and fill with cherry preserves. Top each cookie with sliced almonds.
  7. Bake for 12-15 minutes or until the edges are lightly golden. Allow to cool on a wire rack.
  8. In a small bowl, mix powdered sugar with milk to create a glaze. Drizzle over cooled cookies.
