- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons almond extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup cherry preserves
- 1/2 cup sliced almonds
- 1 cup powdered sugar
- 2 tablespoons milk
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the almond extract.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them a few inches apart.
- Make a small indentation in each cookie and fill with cherry preserves. Top each cookie with sliced almonds.
- Bake for 12-15 minutes or until the edges are lightly golden. Allow to cool on a wire rack.
- In a small bowl, mix powdered sugar with milk to create a glaze. Drizzle over cooled cookies.
