Cherry Pistachio Cheesecake – A Stunning No-Bake Showstopper!

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup cherries, pitted and halved
  • ½ cup pistachios, chopped

Instructions

  1. In a bowl, mix graham cracker crumbs and melted butter until combined, then press into the bottom of a springform pan.
  2. In another bowl, beat cream cheese and powdered sugar until smooth.
  3. Whip the heavy cream and vanilla extract, then fold into the cream cheese mixture.
  4. Gently fold in cherries and pistachios.
  5. Spread the filling over the crust and refrigerate for at least 4 hours.
  6. Serve chilled and garnish with extra cherries and pistachios if desired.
