- 2 cups cooked shredded chicken
- 1 cup enchilada sauce
- 1 cup shredded cheese
- 8 flour tortillas
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- Preheat your oven to 350°F (175°C).
- In a pan, heat olive oil over medium heat. Add onions and garlic, and sauté until soft.
- Stir in the shredded chicken, cumin, chili powder, and salt.
- Take a tortilla and fill it with the chicken mixture and some cheese. Roll it up and place it seam side down in a baking dish.
- Repeat until all tortillas are filled.
- Pour enchilada sauce over the top and sprinkle with remaining cheese.
- Bake for 20 minutes until cheese is bubbly.
Notes
- For added flavor, try adding black beans or corn to the chicken mixture.
- Top with fresh cilantro or avocado for a fresh garnish.
