- 4 boneless chicken breasts
- 6 slices turkey bacon
- 1 cup chicken stock
- 2 cups mushrooms, sliced
- 1 cup Madeira wine
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 tablespoon garlic, minced
- Salt and pepper to taste
- Preheat oven to 375°F (190°C).
- In a skillet, cook the turkey bacon until crispy, then set aside.
- In the same skillet, sauté mushrooms until golden brown.
- Season the chicken breasts with salt and pepper, then sear in olive oil and butter until browned.
- Add minced garlic to the skillet and cook for 1 minute.
- Pour in Madeira wine and chicken stock, and let simmer for a few minutes.
- Layer cooked bacon and mushrooms on top of the chicken, then transfer to the oven.
- Bake for 25-30 minutes or until chicken is cooked through.
