Chicken Madeira

Delight in the juicy flavors of Chicken Madeira, enhanced with the rich taste of turkey bacon and chicken ham.

  • 4 boneless chicken breasts
  • 6 slices turkey bacon
  • 1 cup chicken stock
  • 2 cups mushrooms, sliced
  • 1 cup Madeira wine
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 tablespoon garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, cook the turkey bacon until crispy, then set aside.
  3. In the same skillet, sauté mushrooms until golden brown.
  4. Season the chicken breasts with salt and pepper, then sear in olive oil and butter until browned.
  5. Add minced garlic to the skillet and cook for 1 minute.
  6. Pour in Madeira wine and chicken stock, and let simmer for a few minutes.
  7. Layer cooked bacon and mushrooms on top of the chicken, then transfer to the oven.
  8. Bake for 25-30 minutes or until chicken is cooked through.

Notes

  • Serve with a side of mashed potatoes or steamed vegetables.
  • Adjust the amount of Madeira wine for a stronger flavor.
