  • 4 boneless, skinless chicken breasts
  • 1 cup flour
  • 1 tablespoon olive oil
  • 8 ounces mushrooms, sliced
  • 1 cup Madeira wine
  • 1 cup chicken broth
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt and pepper, then dredge in flour.
  2. Heat olive oil in a large pan over medium heat and cook the chicken until golden brown on both sides.
  3. Remove the chicken and set aside. In the same pan, add mushrooms and sauté until tender.
  4. Pour in the Madeira wine and chicken broth, bring to a boil, then reduce heat and simmer.
  5. Add the chicken back to the pan and cook until fully cooked through.
  6. Garnish with fresh parsley before serving.
