Chicken Pot Pie Soup

A warm and comforting chicken pot pie soup that’s easy to make and features turkey bacon for added flavor.

  • 1 tablespoon olive oil
  • 4 slices turkey bacon
  • 1 cup diced onion
  • 2 cups chopped carrots
  • 2 cups chopped celery
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 cup all-purpose flour
  • 6 cups chicken broth
  • 2 cups shredded cooked chicken
  • 1 cup frozen peas
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat and cook turkey bacon until crisp. Remove and set aside.
  2. In the same pot, add onion, carrots, and celery. Sauté until softened.
  3. Add garlic, thyme, and rosemary, cooking for an additional minute.
  4. Stir in flour and cook for a minute to remove raw taste.
  5. Gradually whisk in chicken broth, bringing the mixture to a boil.
  6. Once boiling, add shredded chicken, peas, and cream. Simmer until heated through.
  7. Season with salt and pepper, and crumble the turkey bacon on top before serving.

Notes

  • For a lighter version, you can use less cream or substitute with milk.
  • Adding potatoes can make the soup heartier.
