Chicken Pot Pie Soup

A warm and hearty soup that combines the flavors of chicken pot pie with the added delight of turkey bacon.

  • 4 slices turkey bacon, chopped
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon thyme
  • 1/2 teaspoon black pepper
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 2 cups frozen mixed vegetables
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped turkey bacon and cook until crispy.
  2. Add onion, carrots, and celery, cooking until softened.
  3. Stir in garlic, thyme, and black pepper, cooking for an additional minute.
  4. Pour in the chicken broth and bring to a boil.
  5. Add cooked chicken and mixed vegetables. Reduce heat and let simmer for 10 minutes.
  6. In a small bowl, whisk together heavy cream and flour. Slowly stir into the soup and cook until thickened.
  7. Remove from heat and stir in fresh parsley before serving.

Notes

  • This soup can be made ahead of time and reheated for a quick meal.
