Chicken Pot Pie Soup

A delicious and comforting Chicken Pot Pie Soup with the added flavor of turkey bacon.

Ingredients

  • 4 slices turkey bacon
  • 1 cup diced onion
  • 2 cups diced carrots
  • 2 cups diced celery
  • 3 cloves garlic, minced
  • 1/2 cup all-purpose flour
  • 4 cups chicken broth
  • 2 cups shredded cooked chicken
  • 1 cup frozen peas
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop.
  2. Add the onion, carrots, and celery to the pot and sauté until softened.
  3. Stir in garlic and flour, cooking for another minute.
  4. Gradually add chicken broth, stirring to avoid lumps.
  5. Bring to a simmer and add the chicken, peas, and thyme. Cook for 10 minutes.
  6. Stir in heavy cream and cooked bacon. Season with salt and pepper.
  7. Serve hot.

Notes

  • For a gluten-free version, use cornstarch instead of flour.
