  • 1 cup chopped onion
  • 2 cups diced carrots
  • 2 cups diced potatoes
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups chicken broth
  • 2 cups shredded cooked chicken
  • 1 cup frozen peas
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and sauté until translucent.
  2. Add the carrots, potatoes, garlic, thyme, salt, and pepper. Cook for 5 minutes.
  3. Pour in the chicken broth and bring to a simmer.
  4. Stir in the chicken, peas, and heavy cream. In a small bowl, whisk together the flour with some water to make a slurry, then add to the pot.
