Chipotle Black Bean Burgers with Buttermilk Slaw

A delicious recipe for chipotle black bean burgers topped with a creamy buttermilk slaw.

Ingredients

  • 1 can black beans
  • 1 cup breadcrumbs
  • 1 chipotle pepper in adobo sauce
  • 1 teaspoon cumin
  • 1 egg
  • 1/2 cup corn
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup buttermilk
  • 1 cup shredded cabbage
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 375°F.
  2. In a bowl, mash the black beans.
  3. Add breadcrumbs, chipotle pepper, cumin, egg, corn, salt, and pepper. Mix well.
  4. Form into patties and place on a baking sheet.
  5. Bake for 25 minutes or until golden brown.
  6. For the slaw, mix buttermilk, cabbage, mayonnaise, and lemon juice in a separate bowl.
  7. Serve the burgers topped with creamy slaw.

Notes

  • Let the burgers rest for a few minutes after baking.
  • Adjust the spiciness by adding more or less chipotle pepper.
