  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lime, juiced
  • 1 cup tortilla strips
  • 1/4 cup chopped cilantro

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion and garlic, cooking until softened.
  3. Stir in diced tomatoes and their juices.
  4. Add chicken broth, shredded chicken, black beans, corn, cumin, chili powder, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
