Classic Lemon Squares

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 cup granulated sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1/4 teaspoon baking powder
  • 1 pinch salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, butter, and sugar until crumbly.
  3. Press the mixture into the bottom of a greased baking dish.
  4. Bake for 15-20 minutes or until lightly golden.
  5. In another bowl, whisk together eggs, sugar, lemon juice, lemon zest, baking powder, and salt.
  6. Pour the lemon mixture over the baked crust.
  7. Bake for an additional 20-25 minutes, or until set.
  8. Allow to cool, then cut into squares and serve.

Notes

  • For a stronger lemon flavor, add more lemon zest.
  • Dust with powdered sugar before serving for added sweetness.
