  • 1 cup jasmine rice
  • 1 1/2 cups coconut milk
  • 1 pound boneless chicken thighs
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 lime, juiced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped cilantro

Instructions

  1. Rinse the jasmine rice and add it to a pot with coconut milk. Bring to a boil, then reduce to a simmer and cover for 15 minutes.
  2. Meanwhile, heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant.
  3. Add chicken thighs to the skillet, season with soy sauce, salt, and pepper. Cook until the chicken is browned and fully cooked.
  4. Once the rice is done, fluff it with a fork and mix in lime juice and chopped cilantro.
  5. Serve the chicken over the coconut rice and garnish with additional cilantro if desired.
