  • 1 tablespoon lime zest
  • 2 tablespoons fresh lime juice

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine the melted butter, eggs, coconut milk, lime zest, and lime juice.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
