  • 6 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 onion, chopped
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • 2 tablespoons olive oil
  • salt to taste
  • black pepper to taste

Instructions

  1. Start by baking the potatoes at 400°F for about 1 hour or until tender. Once cooled, scoop out the insides and set aside.
  2. In a large pot, heat olive oil over medium heat and sauté the onions until translucent.
  3. Add turkey bacon and chicken ham, cooking until bacon is crispy.
  4. Stir in the potato flesh, chicken broth, and heavy cream. Bring to a simmer.
  5. Use an immersion blender to blend slightly, leaving some chunks for texture.
  6. Stir in cheddar cheese and sour cream until melted and well combined.
  7. Season with salt and black pepper to taste.
  8. Serve hot, garnished with green onions.

  • For a lighter version, use low-fat milk instead of heavy cream.
