Copycat Panera Broccoli Cheese Soup Recipe

A deliciously creamy and comforting copycat version of the famous Broccoli Cheese Soup from Panera Bread.

Ingredients

  • 3 cups broccoli florets
  • 1 cup diced yellow onion
  • 2 cups shredded carrots
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 4 cups vegetable broth
  • 2 cups heavy cream
  • 2 cups shredded cheddar cheese
  • 1 teaspoon garlic powder
  • salt to taste
  • pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the onions and carrots, and sauté until the onions are translucent.
  3. Stir in the flour and cook for another minute.
  4. Gradually add the vegetable broth while whisking to avoid lumps.
  5. Add the broccoli and garlic powder, and cook until the broccoli is tender.
  6. Reduce the heat and stir in the heavy cream and cheddar cheese until melted and smooth.
  7. Season with salt and pepper to taste. Serve hot.

Notes

  • For a thicker soup, reduce the amount of vegetable broth.
  • Feel free to add other vegetables like cauliflower or potatoes.
