  • 1/2 teaspoon baking soda

  • 1 cup dried cranberries, chopped
  • 1 tablespoon orange zest

Instructions

  1. In a large bowl, cream together the butter and sugar until light and fluffy.
  2. Add the egg and vanilla, mixing until well combined.
  3. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, blending until combined.
  5. Fold in the chopped cranberries and orange zest.
  6. Divide the dough into two logs and wrap in plastic wrap.
  7. Chill in the refrigerator for at least 2 hours or until firm.
  8. Preheat the oven to 350°F (175°C).
  9. Slice the chilled dough into thin rounds and place them on a baking sheet.
  10. Bake for 10-12 minutes or until the edges are lightly golden. Allow to cool on a wire rack.
