  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup diced tomatoes

Instructions

  1. Cook the penne pasta according to the package instructions; drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced chicken and sprinkle with Cajun seasoning. Cook until the chicken is browned and cooked through.
  3. Add the minced garlic and cook for an additional minute.
  4. Stir in the heavy cream and bring to a simmer. Add the grated Parmesan cheese and stir until melted.
  5. Add the cooked pasta and diced tomatoes to the skillet and toss to combine.
  6. Serve hot, garnished with extra Parmesan if desired.
