  • 4 cups chicken broth
  • 1 can (10 oz) red enchilada sauce
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup heavy cream
  • 1 cup shredded cheese
  • 1/4 cup chopped cilantro

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and minced garlic; sauté until soft.
  3. Stir in the chicken broth and enchilada sauce.
  4. Add shredded chicken, black beans, corn, cumin, and chili powder; bring to a simmer.
