  • 1 can (10 oz) enchilada sauce
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup corn, frozen or canned
  • 1 cup black beans, drained and rinsed
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 cup shredded cheese

Instructions

  1. In a large pot, sauté the onion and bell pepper until soft.
  2. Add the shredded chicken, enchilada sauce, chicken broth, corn, black beans, cumin, and garlic powder.
  3. Bring to a simmer and cook for 15 minutes.
  4. Stir in the heavy cream and half of the cheese. Cook for an additional 5 minutes.
