  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) corn, drained
  • 1 can (14 ounces) diced tomatoes
  • 1 cup heavy cream
  • 1 cup tortilla chips, crushed
  • 1/2 cup cilantro, chopped
  • 1 lime, juiced

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion and garlic, and sauté until translucent.
  2. Stir in cumin and chili powder, cooking until fragrant.
  3. Add the chicken broth, shredded chicken, black beans, corn, and diced tomatoes. Bring to a boil, then reduce heat and simmer for 20 minutes.
