Creamy Corn Chowder

A delicious and comforting creamy corn chowder made with turkey bacon.

Ingredients

  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups corn, fresh or frozen
  • 3 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy, then remove and set aside.
  2. Add olive oil to the pot, and sauté the onion until translucent.
  3. Add garlic and cook for another minute.
  4. Stir in the corn and pour in the vegetable broth, bringing to a simmer.
  5. After 15 minutes, stir in heavy cream, salt, pepper, and paprika.
  6. Crumble the turkey bacon and add back to the pot.
  7. Simmer for an additional 5 minutes and serve hot.

Notes

  • For a vegetarian version, omit the turkey bacon.
  • Can be stored in the refrigerator for up to 3 days.
