Creamy Leek and Potato Soup

This creamy leek and potato soup is a warm, comforting dish, enriched with the smoky flavor of turkey bacon.

Ingredients

  • 4 leeks, cleaned and chopped
  • 2 medium potatoes, peeled and diced
  • 4 slices of turkey bacon, chopped
  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat and add the turkey bacon. Cook until crispy.
  2. Add the leeks, onions, and potatoes, cooking until softened.
  3. Pour in the chicken broth and bring to a boil. Reduce heat and simmer until potatoes are tender.
  4. Stir in the heavy cream, and season with salt and pepper. Blend until smooth.
  5. Serve warm, garnished with additional turkey bacon if desired.

  • For a vegetarian version, omit the turkey bacon and use vegetable broth.
