Ingredients

  • 2 large leeks, cleaned and sliced
  • 4 medium potatoes, peeled and diced
  • 4 slices turkey bacon, chopped
  • 1 medium onion, diced
  • 3 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped turkey bacon and cook until crispy.
  2. Add the diced onions and leeks, cooking until they are soft.
  3. Stir in the diced potatoes and cook for an additional 5 minutes.
