- 2 large leeks, cleaned and sliced
- 4 medium potatoes, peeled and diced
- 4 slices turkey bacon, chopped
- 1 medium onion, diced
- 3 cups vegetable or chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- In a large pot, heat the olive oil over medium heat. Add the chopped turkey bacon and cook until crispy.
