Creamy Parmesan Italian Sausage Ditalini Soup

  • 1 tablespoon olive oil
  • 1 pound Italian sausage
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup ditalini pasta
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups fresh spinach

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the sausage and cook until browned.
  2. Add the onion and garlic, sauté until the onion is translucent.
  3. Pour in chicken broth and diced tomatoes. Bring to a boil.
  4. Stir in ditalini pasta and cook according to package instructions.
  5. Reduce heat and stir in heavy cream, Parmesan cheese, and Italian seasoning. Season with salt and pepper.
  6. Add spinach and cook until wilted. Serve warm.
