Creamy Tuscan Salmon Pasta

A rich and creamy pasta dish with salmon and turkey bacon, inspired by Tuscan flavors.

  • 8 ounces linguine
  • 2 tablespoons olive oil
  • 6 slices turkey bacon
  • 1 pound salmon fillet
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the linguine according to package instructions.
  2. In a large skillet, heat olive oil over medium heat and cook turkey bacon until crispy.
  3. Add salmon to the skillet and cook until golden brown, then remove and set aside.
  4. In the same skillet, add garlic and cook until fragrant.
  5. Stir in heavy cream, cherry tomatoes, and spinach, and simmer for a few minutes.
  6. Return salmon to the skillet, add Parmesan cheese, and stir until well combined.
  7. Serve the creamy sauce over the cooked linguine.

Notes

  • For a lighter version, substitute cream with Greek yogurt.
