Crock Pot Creamy Chicken Parmesan Soup

  • 1 pound boneless chicken breasts
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup diced tomatoes
  • 1 tablespoon Italian seasoning
  • 2 cloves garlic, minced
  • 1 cup chopped spinach
  • Salt and pepper to taste

Instructions

  1. Place the boneless chicken breasts in the crock pot.
  2. Add the chicken broth, heavy cream, grated Parmesan cheese, diced tomatoes, Italian seasoning, and minced garlic.
  3. Cover and cook on low for 6 to 8 hours, or high for 3 to 4 hours, until the chicken is cooked through.
  4. Remove the chicken, shred it, and return it to the soup.
  5. Add the chopped spinach and stir. Allow it to heat through for about 10 minutes.
  6. Season with salt and pepper to taste before serving.

Notes

  • For a thicker soup, you can add a cornstarch slurry towards the end of cooking.
