Crockpot Chicken Parmesan Soup

  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 cup cooked pasta (optional)

Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. Add the chicken broth, diced tomatoes, onion, garlic, basil, and oregano.
  3. Cook on low for 6-8 hours or high for 4-5 hours.
  4. Shred the chicken and stir in the heavy cream and Parmesan cheese.
  5. Season with salt and pepper to taste. If desired, add cooked pasta before serving.

Notes

  • For a thicker soup, reduce the amount of chicken broth.
  • Fresh herbs can be used instead of dried for an enhanced flavor.
