Crockpot Chicken Tikka Masala

  • 2 pounds boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 2 teaspoons garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (13.5 oz) coconut milk
  • 2 cups spinach, fresh
  • 1/4 cup cilantro, chopped

Instructions

  1. In a large bowl, mix together the garam masala, cumin, turmeric, paprika, salt, and pepper. Add the chicken thighs and coat them in the spice mixture.
  2. In your crockpot, layer the diced onion and garlic at the bottom.
  3. Add the spiced chicken on top of the onion and garlic.
  4. Pour the tomato sauce and coconut milk over the chicken.
  5. Cover and cook on low for 6-8 hours or on high for 4-5 hours.
  6. About 30 minutes before serving, add the fresh spinach.
  7. Garnish with chopped cilantro before serving.
