1 pound chicken breasts
1 can corn, drained
1 can black beans, rinsed and drained
1 can diced tomatoes
1 can green chilies
1 teaspoon cumin
1 teaspoon chili powder
4 cups chicken broth
1 cup heavy cream
1 cup shredded cheese
1 onion, chopped
2 cloves garlic, minced
1 teaspoon salt
1 teaspoon pepper
1 cup tortilla chips, for serving
Instructions
In a slow cooker, add the chicken breasts, corn, black beans, diced tomatoes, green chilies, cumin, chili powder, chicken broth, onion, garlic, salt, and pepper.
Cover and cook on low for 6-8 hours or high for 3-4 hours.
About 30 minutes before serving, shred the chicken with two forks and stir in the heavy cream and shredded cheese.
Serve with tortilla chips on top.
Notes
For extra flavor, add chopped cilantro before serving.
