  • 1 pound chicken breasts
  • 1 can corn, drained
  • 1 can black beans, rinsed and drained
  • 1 can diced tomatoes
  • 1 can green chilies
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 cup tortilla chips, for serving

Instructions

  1. In a slow cooker, add the chicken breasts, corn, black beans, diced tomatoes, green chilies, cumin, chili powder, chicken broth, onion, garlic, salt, and pepper.
  2. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  3. About 30 minutes before serving, shred the chicken with two forks and stir in the heavy cream and shredded cheese.
  4. Serve with tortilla chips on top.

  • For extra flavor, add chopped cilantro before serving.
