Crockpot Honey Garlic Chicken

Ingredients

  • 2 pounds chicken thighs
  • 1 cup honey
  • 1/2 cup soy sauce
  • 1/4 cup ketchup
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 1/4 teaspoon black pepper
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. In a bowl, mix honey, soy sauce, ketchup, minced garlic, minced ginger, and black pepper.
  2. Pour the mixture over the chicken thighs in the crockpot.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  4. Once cooked, remove chicken and set aside.
  5. Mix cornstarch and water in a small bowl until smooth, then stir into the sauce in the crockpot.
  6. Cook for an additional 15 minutes or until the sauce thickens.
  7. Return chicken to the crockpot and coat with sauce.
  8. Serve warm with rice or vegetables.

Notes

  • For a spicier dish, add red pepper flakes.
  • Serve over a bed of rice for a complete meal.
