- 2 pounds chicken thighs
- 1 cup honey
- 1/2 cup soy sauce
- 1/4 cup ketchup
- 1 teaspoon minced garlic
- 1 teaspoon minced ginger
- 1/4 teaspoon black pepper
- 1 tablespoon cornstarch
- 2 tablespoons water
- In a bowl, mix honey, soy sauce, ketchup, minced garlic, minced ginger, and black pepper.
- Pour the mixture over the chicken thighs in the crockpot.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours.
- Once cooked, remove chicken and set aside.
- Mix cornstarch and water in a small bowl until smooth, then stir into the sauce in the crockpot.
- Cook for an additional 15 minutes or until the sauce thickens.
- Return chicken to the crockpot and coat with sauce.
- Serve warm with rice or vegetables.
