- 2 cups chopped bell peppers
- 1 pound turkey bacon, diced
- 1 cup chopped onion
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (15 oz) diced tomatoes
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cooked rice
- In a large crockpot, combine all the ingredients except for the cooked rice.
- Cover and cook on low for 6-8 hours or until the peppers are tender.
- Stir in the cooked rice just before serving.
