  • 8 ounces lasagna noodles
  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 15 ounces ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 2 cups spinach, fresh

Instructions

  1. In a skillet, cook turkey bacon until crispy. Remove and chop.
  2. Add olive oil, onion, and garlic to the skillet. Sauté until onions are translucent.
  3. In the Crockpot, combine chicken broth, salt, pepper, and Italian seasoning.
  4. Add the sautéed onion and garlic, turkey bacon, and uncooked lasagna noodles to the Crockpot.
  5. Cover and cook on low for 4 hours.
  6. Stir in ricotta, mozzarella, and spinach in the last 30 minutes of cooking.
  7. Serve warm and enjoy!

Notes

  • For a vegetarian version, omit turkey bacon and use vegetable broth.
  • Top with extra cheese before serving for added flavor.
